Spotlight on Daikon Radishes

Today boys and girls we’re gonna be talking about something interesting called a daikon radish. It looks a lot like a big white carrot but it’s actually a part of the radish tribe.

Ok but before I dive all into this, I want to share how I found them.

About a month ago I came across one of those ad’s Facebook delights in stuffing into our newsfeed, but this was one I was REALLY interested in, as opposed to some of the nonsense they think I wish to see.

It was for a company called “Imperfect Produce”.  A quick read on it educated me that they are about reducing wasted produce that otherwise won’t make it into your local store.

I guess I never really gave much thought to the fact the fruits and vegetables you see are all generally similar sizes, shapes and attractive in appearance.

I never really thought about  things being “to big” or “to small” or “to ugly”  or “imperfect” to sell.  It can also be to an over abundance of a certain food as well. Only so many zucchini can go on a store shelf……..

This company buys food from farmers and it’s kind of a win/win. The farmer makes some money on what might have gone to the pigs, it’s not being needlessly wasted, and you get a cool produce box that’s an interesting variety each week.

When I checked into it, by checking my zip code, I was already thinking they wouldn’t deliver in my area.

Well, imagine my surprise when they showed my area was a part of delivery service. For 4.99 they bring you this interesting box..

My first box came about 9:30 at night. They text you to let you know it’s on it’s way, and when they are close to you. I was really impressed that the box was so attractive and it was so pretty inside…..

not only that, it’s delivered in a chilled (uh… not like “chill” laid back and calm “chill” but cold.. hahaha)  van so everything is nice, cold and fresh. It really impressed me… which I guess is why I’m starting my fourth order this week 🙂

Basically, you can choose all veggies, all fruit or mixed. You can choose from organic or regular produce. You can take the box the send you, or customize your own. You can also pick weekly service, or bi-weekly. I opted for a mixed box.

Not only all that, whoever does the marketing has a wicked fun sense of humor so I related to that as well.

Carrot or radish?

When they showed Daikon radishes as being available, I figured why not give it a try? And like you, I knew nothing of them. So let’s get a little established on what they are.

The daikon radish looks like a white carrot. It’s a root vegetable, but instead of having a potent, peppery taste, it’s sweet, crisp and mild.

A part of the radish family it grows much larger than it’s counter parts, upwards of 20 inches long and 4 inches wide!

Unlike other radishes, it’s as good cooked, as it is raw.

On a nutritional level, they are full of vitamin A, C, E, B6, potassium, and other minerals, radishes can give your whole body an immunity boost.

Try them baked or boiled in stews and soups or in a stir fry. Also try them lightly steamed with olive oil, salt or lemon juice for flavor.  Slice daikon radishes and eat raw with a dip or peanut butter or add shredded raw Daikon radishes to salads.

Daikon radishes are very popular in Asian dishes.

Daikon is quite perishable, so if serving it raw try to use it within 4 days of purchase. If cooking daikon, it can be stored up about a week. Keep it in a perforated plastic bag in the crisper drawer of the refrigerator.

Veggie Tales

I will admit this publicly. Maybe I shouldn’t.  You might be shocked.

But I’m semi-horrified when someone tells me they don’t eat veggies or don’t like them.

I’m like… “What did your mother DO to you??”

Oh, I get it. As parents we do try. I had one son who never really got into the veggie thing even though I fed him assortments of veggies as an infant (even then he wasn’t crazy over them) he has select ones he eats now, but at least he eats them.

As my kids grew up I made sure to present them with all varieties of food. I wanted them to at least try it before pronouncing they didn’t like it. I wasn’t a member of the “clean your plate” club like I grew up in but they did need to sample it.

My Mom used to delight in telling a story how I wanted scrambled eggs for breakfast but then changed my mind and didn’t want to eat them. When I stubbornly refused ( ah I was a bit head strong even then 😉 ) she evidently kept them around….

All. day. long.

They made an appearance at lunch… to which I refused to eat them… they were again brought out later.

Isn’t that child abuse or something ?! I had to take her word for it as I guess the trauma of having to see eggs that were becoming older and older by the moment was somehow blocked from my mind.

It’s a miracle I still eat eggs.

Needless to say, I didn’t grow up being allowed to be a picky eater and I was offered a wide variety of foods. It’s pretty much how my kids have been raised.

So when I’m confronted with the revelation someone doesn’t eat them ( more common than you may know)  I’m honestly floored.

Upon deeper probing sometimes that person reveals that the only veggies they may have known come from a can or they would be so steamed/overcooked by mom they turned into mush.

ok… well maybe then I’d be down on veggies too.  I’ve been in numerous buffet or banquet lines where the veggies in the pan were loose memories of what they used to be.

But beautiful, colorful, fresh produce?

Crisp green veggies perfectly steamed or better yet, roasted? There is no comparison in how delicious they are.

Roasting veggies has to be by far, my favorite way to cook and eat them.

I can eat my body weight in roasted veggies.  You think I’m joking….

Roasting is such a simple quick way to prepare them while not killing off the nutritional value. I usually use some olive oil, lots of cracked pepper and some sea salt. Roast at about 450 and stir occasionally to let them crisp up.

Pure. Heaven.

Ok I’m giving you a cheat sheet for common ones so you have no excuse to not try them 😉

Ok maybe you like steamed. Some veggies are lovely when steamed till crisp tender. Steaming also helps retain all of the vitamins and minerals present in them.

And for the record, all of those will roast up quite nicely too.

One of my favorite roasted combos is sweet potatoes and brussel sprouts.

Ok… stop turning up your nose and making gagging noises.  I hear you.

Seriously, I’ve turned my kids into brussel sprout eaters by roasting them. If the only memories you have are of Sunday dinner and grandma cooking the life out of them and watching them roll around your plate…well.. leave those memories behind and get in the here and now.

The sweetness of the potatoes blends so wonderfully with the sprouts… yummy. Let them cook long enough to get crispy with the potatoes.

I have some friends who chop up a little bacon and cook them together. Now if you go this route be mindful your also adding additional fat to otherwise healthy veggies…but it is really good 😉

Roasted cauliflower is another favorite. In fact, I have to watch myself ’cause I’ll just nibble at it while I’m finishing dinner then wonder.. “didn’t I make more of this?” haha

It’s another kid favorite too. I’ve now gone to making two heads when I do it to ensure everyone can have what they want. Not only that, leftovers make great additions to my salad lunch the next day.

Ok maybe now I should try and sell you on WHY you should be consuming vast quantities of these.

Keep in mind, this is no where near a comprehensive chart.

Veggies not only fill you up for minimal calories, they deliver incredible health benefits to your body in the way of vitamins and minerals.

They can help protect/prevent many diseases.  You can eat wheelbarrow loads of them and not worry about calories.

They do amazing things for your skin, hair, and many offer anti-aging benefits as well as help keep you lean.

A diet high in veggies/fruits also ensures that your internal systems all work regularly and properly.

Eating plenty of veggies also gives you energy and keeps you from that sluggish feeling of to many higher carb foods in a meal.

Listen to me. Just eat your veggies.

Your body wants them. Your health will improve with them. It will help you lose weight. It will help with the appearance of your skin and hair. Oh yeah, and remember me mentioning many have anti-aging properties?

How many reasons do you need to eat them? All you need to do is be willing to be open to try some new things and experiment. If you make a valiant effort with something you don’t like, move on to the next one.

Has it ever made you wonder why there are sooooo many veggies and fruits? It’s because we were made to eat a whole lot of them AND they are amazingly good for us!

The Skinny On Veggies

I wandered through the produce department tossing various veggies in my basket, once again struck by the amazing color and vast variety of goodies there was to choose from and perplexed at how so many people could ignore so much of this part of the store.

Ok I will freely admit my veggie consumption has increased …tons….in the last few years. True, I didn’t grow up a picky eater and learned to eat a good variety of foods but as an adult I’ve let myself really experiment more and remember the wise words of my Mom…..

“Oh try some… it won’t kill you!”

And again… Mom knows best 😉

I will admit when I talk with people to see so many still kinda turn their noses up at eating veggies? ….or they consider veggies to be corn, peas, and potatoes? No.

Here’s my take on it….why you want more….

First, they all pack ridiculously low level of calories, while delivering high levels of vitamins, minerals and other body healthy goodness, why wouldn’t you go after foods that were that filling AND low in calories?

More food… more satisfied… build a healthy body… that’s a winning deal, right?

Yet so many people have weird hang ups with them, refuse to eat them, or eat very little of them.

So here’s what I’m gonna tell you.. and I might sound like your mom.. well .. I am a mom..so listen to me…

Eat your veggies, they ARE amazingly good for you and can be a key component in getting lean and staying lean. Not only that, high vegetable intake has been shown to reduce major diseases like diabetes, heart disease, cancer, obesity and others.

Where oh where does one start if they’ve been living an anti-veggie life, or living a low-level veggie life ?

First, start with what you like. Don’t for the love of all things green choke down broccoli if you can’t stand it. There are a zillion types of veggies, you’ll find some you enjoy.

Aim for at least 2-3 cups at a meal, yes, that means some of you will be consuming a lot of produce. Don’t freak on me. When you learn to eat them at all meals you’ll see it’s not to hard.

Cook them in all kinds of ways. Roast, sautéed, grilled and steamed are  all  ways of enjoying them.

Roasting lately, is my all time favorite way to prepare them. For some reason it brings out the flavors and crisps them some and…yeah.. deliciousness. I have been hooked on roasted cauliflower lately.  The cool thing is, my kids wolf it down just as fast =)

When you fill your plate with a variety of veggies, you will need less of higher calorie foods.

Washing, cleaning and having prepared raw veggies in fridge will make it easier to grab them for snacks and salads.

Olive oil with some stone ground pepper, and a little sea salt are the secret ingredients to yummy roasted veggies.

 Some helpful tips for building more into your daily nutritional plan:

Learn to eat them at all meals. Sautéing mushrooms, spinach, and peppers together is very good with eggs.

Learn to incorporate all kinds into a lunch salad ( and remember to lose those crazy high fat dressings)  I honestly get the biggest bulk of mine at lunch on most days.

Look for recipes that sound good and experiment with something new.  I know that sounds like… a no brainer… but I’m surprised at people who settle for over steamed, wilted options … no wonder they don’t wanna eat them 😉

Remember, start small with your goal to gradually increase.
